Cucumber Boats w/ Sea Moss

Cucumber Boats w/ Sea Moss

Ingredients: cucumbers, 2 carrots, 2 nori sheets (shredded), 1/2 red pepper (chopped), 1 small red onion (diced), 1/2 cup celery (chopped), 2 cloves garlic (minced), 2 tbsp EA Sea Moss, 1/2 avocado (chopped), 1/2 cup vegan mayo, cherry tomatoes (for garnish), sundried tomatoes (for garnish), parsley (for garnish), pink Himalayan salt (to taste), and pepper (to taste)

Instructions: 

1. Prep Cucumbers: Wash, rinse, and peel cucumbers, then cut in half and use a spoon to scoop out the seeds - creating space for the filling.

2. Make Filling: Add all ingredients (except cucumbers, tomatoes, sundried tomatoes, and parsley) to a mixing bowl and mix well.

3. Assemble Boats: Fill each cucumber with "carrot tuna" salad and garnish with tomatoes, sundried tomatoes, and parsley. *2-3 boats makes a serving.
